In the late 1960’s, it was Robert Mondavi who was first to call his Sauvignon Blanc, Fumé Blanc, to play off of the wines of Pouilly Fumé in France’s Loire Valley. This wine is aged on the lees and sees a little bit of new French oak giving it a rounder and more complex style. Pair with pork tenderloin, chicken salad and grilled lobster tails.
